This cheese is great to cut and eat with crackers for company and a great bottle of wine. Also great for pizza.
1 cup sweet potato (1 large boil till tender)
1 cup non-dairy milk (can make your own)
1/3 cup cashews soaked in water, drain
In Blender put potatoes and spices and blender till smooth
1/2 tsp paprika
1/2 tsp cumin
1 tsp salt
2 tsp garlic or 2 cloves
1 Tbl soy sauce
1/2 lemon, juiced
2 Tbl nutritional yeast
Directions: In a sauce pan place 1 cup of water with 2 1/2 Tbl of agar-agar powder. Heat mix for 5 minutes until thicken. Pour into the blender mix and whisk well. Put into a mold. Cool until firm.
