This is the best recipe I have found so far for Mac and Cheese and I have tried a lot!
1 1/2 cups cashews, soaked overnight
2 Tbl lemon juice
1 cup warm water
1 tsp salt
1/4 cup nutritional yeast
1 garlic clove
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp Dijon mustard
1/2 cup non-dairy cheddar cheese shreds (I used Daiya brand)
1/2 cup non-dairy cream cheese (I used Wayfare brand)
1/2 box of cooked whole grain elbow noodles
Directions: In a high speed blender add the soaked cashews (drained) and all the rest of the ingredients down to and including the mustard and blend until smooth. Pour in a saucepan and add the cheeses and cook on medium heat until melted. Pour over pasta. Add the caramelized onions, stir and serve.
You can put this in a casserole and bake it with a crumb topping if you want. Look for the crumb topping recipe in the recipe section under Rocky’s and Lori’s Mac and Cheese. Bake for a 1/2 hour at 350 degrees.
