This soup is light and creamy. Along with a cheerful color of orange.
1 chopped onion
4 cups of water or veggie broth
1 pound of carrots diced
1 Tbl minced or finely grated fresh ginger
1 Tbl curry powder
1 1/2 cup non dairy milk
sea salt to taste
Directions: Place all ingredients into a crock pot except for the non dairy milk. Cook on low 3-4 hours. Remove from crock and place in blender. You may have to do in small batches. Return to crock and add non dairy milk.
