A great soup for the cold weather.
2 Tbl olive oil
1 onion, chopped
6 cups fresh or frozen broccoli
3 cups vegetable broth
1 can northern white beans or cannellini beans
1/2 cup non-dairy milk
2 cups shredded non-dairy cheddar cheese
1 tsp dry mustard
Salt to taste
Cook the onions in oil until soft. Add broccoli, beans and broth and cook 15 mins on medium heat. Put in blender and process until smooth. Return to pan and simmer until bubbling around the edges. Stir in milk, cheese, mustard and salt. Cook until warm throughout and cheese has melted.
