A friend at work shared this recipe with me. I made it for my department and my coworkers ate the whole pan.
Ingredients:
1 1/2 cup black beans
2 Tbl cocoa
1/2 cup quick oats
1/4 tsp salt
1/3 cup maple syrup
2 Tbl sugar
1/4 cup oil
2 tsp vanilla
1/2 tsp baking powder
1/2 cup to 2/3 cup non-dairy chocolate chips
Directions: Blend in a food processor everything except the chocolate chips. Pour in a greased 8 x 8 pan and sprinkle the chocolate chips on the top. Bake at 350 degrees for 15 to 18 minutes.
