Arugula is high in Vitamin A, Vitamin C, Vitamin K, Folate and calcium. It has a sharp and peppery flavor.
Ingredients:
12 oz Rigatoni pasta, cooked and drained
1-2 cups of chopped arugula
1 10 oz package of frozen snow peas or sugar snap peas, thawed
8 oz of cherry tomatoes, cut into halves
1 medium red or yellow bell pepper, cut into thin strips
1/2 red onion, cut into think strips
1/2 cup sliced black olives
1/3 to 1/2 cup italian vinaigrette
Directions: Combine all ingredients in large serving bowl and toss gently. Serve.
