I have been traveling on/off since 2000. I worked in London to save money during my off time. I have done independent traveling around the world with trips ranging from 1 year to 3 years. I went to Africa for 2 and 1/2 years and India.

1. How Long have you been eating plant-based? I have been plant-based for 11 years.

2. What made you decide to go plant-based? I became plant-based for ethical reasons for the animals. A lot of famous people have been vegan including Buddhist educators, Albert Einstein, Mahatma Gandhi, and the Dalai Lama.

3. What are the benefits eating plant-based have done for you? Personally not a lot. I didn’t have any health problems including disgestive problems, allergies, and I wasn’t overweight. Others have shown great benefits. My outside didn’t change but the inside of me my blood cholesterol is like a babies. I was a fruitarian for a year, which would cause low blood cholesterol. But that was not a practical way of eating while traveling.

4. What did you find to be the biggest challenge of eating plant-based? I wasn’t strong enough at the beginning to stand up for myself and what I wanted to eat and believed in. I didn’t want to upset other people. But I have grown and have no problems speaking up for myself and my beliefs.

5. What are your go to foods for breakfast, lunch and dinner? Breakfast- on the road I eat oatmeal, peanut butter and whole grain bread. Lunch- a lot of times is rice and beans. Dinner- I almost always eat celery to replace my electrolytes and I eat a lot a curries. I also like to buy organic when I can.

6. Do you have a favorite cookbook, tip or recipe to share? When traveling I water down peanut butter to make a creamy sauce, and then I put it on everything. My favorite website is
