Nice hearty but not heavy soup done in the crock pot.
1 cup chopped onion
2 garlic cloves, minced
4 cups of water or veggie stock
1 large head cauliflower coarsely chopped
1 large potato peeled and diced
1/2 cup chopped carrot
1 tsp cumin
1 1/2-2 cups of non dairy milk
sea salt and pepper to taste
Place everything except non dairy milk in a crock pot. Cover and cook on low for 4-5 hours. Remove some of the cauliflower out, puree in a blender then return back into crock. Add non dairy milk.
To change the taste and mildly spice the soup you could use 2 tsp of curry in place of the cumin.
