This is a great winter soup for a cold day.
Ingredients:
1 medium butternut squash, peeled, seeded and cut into small chunks
1 green apple, peeled, seeded and cut into small chunks
1 onion, chopped
2 Tbl non-dairy butter
2 Tbl olive oil
6 cups of vegetable broth
Maple syrup, optional
Directions: In a big pan on medium heat add the butter and oil until the butter has melted. Add the squash, onion and apple and toss until it is all coated with the oil/butter. Add the broth and cook for about 45 minutes until everything is tender. Transfer everything in batches to a blender and blend until smooth. Pour back into pan. Add seasonings to taste and maple syrup to taste 1-2 Tbl.
