Good winter warm-up
Ingredients:
1 large onion chopped
1 medium pepper chopped
2 stalks celery, finely chopped
salt and pepper to taste
1 1/2 tsp cumin
1/4 of parsley
1/4 basil
1 large sweet potato, chopped into chunks
2 cups of corn
4 cups broth, veggie
1/2 salsa ( choice of heat)
1/2 avocado chopped
1/2 cup cilantro
1 tsp of poultry seasoning
Directions:
Add everything together and let it simmer for the day, using a crock. Or if you need a soup for supper, simmer for 35 to 40 minutes until done.
