This recipe we found at Top Secret and switched out the beef with soy crumbles.
Ingredients:
1 13.7 oz package of soy crumbles
1 small onion, diced
1 large carrot, julienned
1 stalk of celery, chopped
2 cloves of garlic, minced
2 14.5 oz cans of diced tomatoes
1 15 oz kidney beans with liquid
1 15 oz great northern beans with liquid
1 15 oz can of tomato sauce
1 12 oz can of tomato juice
1 Tbl white vinegar
1 1/2 tsp salt
1 tsp oregano
1 tsp basil
1/2 tsp pepper
1/2 tsp thyme
1/2 lb of ditali pasta
Directions: Brown the soy crumbles in a large saucepan. Add the onion, carrot, celery and garlic and saute for 10 minutes. Add the remaining ingredients, except pasta, and simmer for 1 hour. About 50 minutes into the simmering, cook the pasta in 2 quarts of water for 10 minutes. Drain and add the pasta to the large pot of soup and simmer for 5 to 10 minutes more.
